Nut-free Oat Bars For Busy Dental Hygienists + Mom’s

Making time to whip up some recipes with nourishing ingredients, but also hits that satisfaction factor, doesn’t have to be daunting or boring!

It literally takes 5 minutes to whip together (with or without a stand mixer) and then 25-minutes-ish to bake. Plus, while they’re baking you can easily warm up some chocolate chips so as soon as they’re ready you can spread the chocolate on top and let them cool.

These are a huge hit in our household. Sometimes I make them twice a week. It’s great for breakfast, lunch and as on-the-go snacks.


INGREDIENTS

  • 1 1/2 cup flour

  • 1 1/2 cup rolled oats

  • 1/2 cup coconut oil, melted 

  • 1/4 c granulated sugar

  • 1/3 c maple syrup 

  • 1 egg

  • 1/4 cup of chia seeds

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 1 tbsp baking powder 

  • 1/2 cup mini chocolate chips (for melting)

  • optional* I’ve added 1/4 cup of applesauce a few times to make them a little more moist and to add a bit more nutrition for my little one

DIRECTIONS

Combine sugar and coconut oil then add in oats, vanilla extract, egg, baking powder, salt, chia seeds and maple syrup. Once combined, add flour (*and apple sauce if you want).

Butter your baking dish. Add in mixture and press down with rubber spatula until it’s even and smooth.

Bake 350 degrees for 25 minutes.

While it’s baking, melt chocolate. I use a melting bowl and if you want you can add ingredients to it, but I just did chocolate chips;) 

Let cool then top with chocolate drizzle and enjoy!
