Cinnamon + Chia Seed Pancakes

These pancakes are hit on our house! My twin sister even came over and had one and she said, “man these are good!”.

Toddler approved, as well :)

Chia seeds are a great super food! They’re great for digestion, but also have a good amount of protein and calcium. I used to not like them when I tried chia pudding in my twenties, but I’m glad I tried them again. They add a nice little crunch to your pancakes. Cinnamon is also a great anti-inflammatory spice and it’s great to cook and bake with this time of year. I hope you give them a try. <3

Prep time: 3-5 minutes

Cook time: about 10 minutes to cook 5 or so pancakes.

Ingredients:

  • 1 1/2 cups of flour

  • 1/4 cup of sugar

  • 3 1/2 tsp of baking powder

  • 1-2 tbsp of cinnamon (i love adding a lot!)

  • 1/2 tsp of salt

  • 2 tbsp of chia seeds

  • 4 tbsp of butter, melted

  • 1 tsp of vanilla extract

  • 1 1/2 cups of milk

  • 1 egg

Instructions:

Add flour, sugar, baking powder, cinnamon, salt + chia seeds to a bowl. Whisk together.

With the back side of your measuring cup, make a little indent into the dry mixture.

In a separate bowl, melt butter and add milk + vanilla extract. Whisk together and then pour into your indented dry mixture. Add in the egg and whisk entire mixture together until everything is combined.

It shouldn’t be too runny or too thick - it should be “just right”. If the mixture is too runny, just add some flour or if it’s too thick, add some milk.

With a ladle, pour onto a buttered pan with your burner on a low setting. It should take about 1-2 minutes to cook until it’s ready to flip. The second side should take only 30 seconds to a minute to cook completely.

Remove from skillet and add to your favorite plate, top with any fruit, nut butters and maple syrup + enjoy!
