Avocado Bread, Roasted Red Pepper Hummus + Turkey Sandwich

I LOVE using hummus as a spread - it adds so much more flavor and nutrition.

We make sandwiches a lot in our household and so I thought I’d share a recipe with you. The bread we used for this recipe actually has jalapeño in it, so it does have a little bit of a subtle “kick” and it’s soooo good!

I used to buy jalapeño hummus at Wegman’s when I was in dental hygiene school, but now Wegman’s is acrossed town so I don’t buy it :( So, I was pleasantly surprised when I came across this bread the other day and saw the ingredients list included jalapeño!!

I used to be terrified of bread. I thought I was one of those girls that had to inevitably avoid bread and carbs because it would make me gain weight or I’d fear I’d lose complete control if I ate it.

But then… I’d have “cheat days” and I’d overeat bread and carbs. Then feel guilty. Then restrict. Yada yada yada. Ya get the picture, right?

Ingredients

  • 2 slices of bread (I like this brand so much, yes it’s REAL bread!!)

  • roasted red pepper hummus (or whichever one you prefer!)

  • 6-8 slices of English cucumber

  • butter lettuce

  • 2 slices of low sodium turkey breast

  • 1-2 slices of American cheese

  • sprinkle of sesame seeds

  • a few dashes of pepper

Instructions

I’m pretty sure if you’re reading my blog, you have a pretty good understanding of how to assemble a sandwich, but I’ll still explain how I did it for this recipe :)

Toast slices of bread, spread hummus onto each slice of bread. On one slice, place the sliced cucumbers followed by the sesame seeds and pepper. On the other slice, place the turkey breast, cheese and then the lettuce leaves.

It should look something like this:

And then sandwich them together and enjoy! :)
